Barbecue (also barbeque, abbreviated BBQ or diminuted chiefly in Australia to barbie) is a method and apparatus for cooking food, often meat, with the heat and hot gases of a fire, smoking wood, or hot coals of charcoal and may include application of a vinegar or tomato-based sauce to the meat. The term as a noun can refer to foods cooked by this method, to the cooker itself, or to a party that includes such food. The term is also used as a verb for the act of cooking food in this manner. Barbecue is usually cooked in an outdoor environment heated by the smoke of wood or charcoal, or with propane and similar gases. Restaurant barbecue may be cooked in large brick or metal ovens specially designed for that purpose.

 

Depending on the region, BBQ means grilling or smoking. In Texas for example, Bbq'ing refers to hot smoking. They use the term "the holy trinity": brisket, sausage and pork ribs.

  • Weber Need a very good no frills grill? Look no further than the Weber Genesis series Silver B. All long-time Weber owners (7+ years) rave about the continued performance of their grills, easy access to parts and excellent warranty service. The grill is mostly assembled in the box, you just put the legs and side tables together with the included tools. Personnally, I prefer the stainless steel cooking grates for their ease of maintenance; there is no porcelain to wear out and they don't need to be seasoned and maintained like cast-iron grates. The fuel gauge is also usefull, although somewhat conservative. I get about 1 more hour once it reads empty. I find that the plastic handle (silver series) has a bit of an advantage over the stainless steel handle (gold or platinum series) as it remains cool to the touch.

    Note: I could only find the Weber Silver B with Stainless Steel cooking grates at Canadian Tire . Home Depot sells the same model (same price) with the lesser porcelain enameled grates. Also worth checking out Home Hardware , they usually have very competitive prices.

For about $1300 you get a large grill (450 sq inches), infra-red rotisserie burner, a pop-up LED light to illuminate your food at night, side burner, cover, assembly and test-fired grill. (Note: most retailers will not let you take these home in a box, so expect to show up with a trailer or large empty van about 1-2 weeks after you've placed your order). Many people enjoy the inside cart propane tank mount.
